George's Kitchen Knife Evolution

Initially the kitchen knives were made with a partial tang and small rounded walnut handle. George quickly established that the partial tang was not strong enough to with
stand the rigors of kitchen use and the straight round handle uncomfortable.

The next move was to a full tang, still with the small walnut handle only this time with
a slight curve on the end. The full tang was stronger however the small handle still
caused hand cramping if used for more than a few minutes.

The knife at the bottom of the photo is the THIRD generation that George makes now.
It has seen several modifications and improvements. Of course it has a FULL tang, the
handle is generous in size and very ergonomic. The fullness in the belly and bulbous
pommel are comfortable for long usage and the pommel allows you to slide to the back
of the handle for chopping. Another addition is the Devcon 11 epoxy that secures the
handle material to the tang. It not only ensures the scales stay put but acts as a sealer
to keep moisture from creeping behind the handle scales and causing problems. The
pins act strictly as sheer pins. The Black Paper Micarta used for the handle material
is a manmade product that is impervious to weather changes unlike the walnut and so
long as your knife does not end up in the dishwasher will last for many years to come.

Wooden handles are available for an additional fee as a special order.
We only use high resign Central American wood as it is not as susceptible
to our constant weather changes and will not crack or split over time.

The Chinese Cleaver combines features of our K6 with a curved cutting edge found in Oriental vegetable preparation. The long curved edge makes slicing, dicing and chopping easier.

All of our wooden chopping boards are hand crafted by a Gentleman in Toronto-Canada. They are beautiful testaments to "Old World Charm" Crafted with love and skill these boards will make a wonderful addition to any kitchen. Each board is unique in pattern, items shipped may not be exactly as shown on site, although I am trying to have a specific model made up just for us. The boards feature North American and Exotic woods such as Maples, Cherry, Walnut, Oak, and Purple Heart.
